Vitamin A: Essential for Vision and Immunity
Vitamin A is a fat-soluble vitamin that plays critical roles in vision, immune function, reproduction, and cellular communication. It exists in two forms: preformed vitamin A from animal sources and provitamin A carotenoids from plant sources. Preformed vitamin A is found in liver, fish oils, milk, and eggs. Your body can use it directly. Beta-carotene is the most important provitamin A carotenoid and gives orange and yellow fruits and vegetables their color. Your body converts beta-carotene to vitamin A as needed, making toxicity from food sources virtually impossible. Vitamin A is essential for the production of rhodopsin, a pigment in your retina that allows you to see in low light. Night blindness is one of the earliest signs of deficiency. Vitamin A also supports the integrity of your skin, the lining of your respiratory tract, and your gut, all of which serve as barriers against infection. Sweet potatoes are one of the richest sources of beta-carotene. A single medium sweet potato provides over four times the daily requirement for vitamin A.
